Coconut candy, also known as Keo Dua, a must-try for coconut fans, is a traditional Mekong Delta candy that is also one of Vietnam's most popular candies. It comes from Ben Tre, which is known as the "Coconut Land" in the S-shaped country.
In big woks, the mixture is cooked and constantly stirred until it caramelizes and thickens. It is then poured into molds, allowed to cool, and then cut into rectangles wrapped in rice paper and then ordinary paper drenched in oil. Because of the double wrapping, the candy does not stick to the paper. Nowadays, keo dua comes in a variety of flavors, including roasted peanuts, pandan leaves, and durian.
Coconut candy is prepared with just a few simple ingredients: coconut water, malt syrup, and sugar. However, the best product requires the right ratio, which the people of Ben Tre achieved admirably. Only this candy has an authentic coconut flavor that is sweet, soft, and chewy. Another feature that distinguishes Ben Tre coconut candy is its edible rice paper wrapper. It appears to be a very thin plastic covering, but it is edible and delicious.
