Banh Can (Baked Rice Flour Cake)

The major ingredient in the rice cake base is made according to a specific recipe. Rice is soaked until soft, then pulverized into a liquid powder. The pancake mix, with the addition of a little cold rice powder dried over the sunny day, is the secret to the tasty cake brittle. If making Khot cake, people use rice flour that has been "fried" (due to the usage of grease) and is based on the type of rice cake "baked"

People must use special molds for the cake base, which are constructed of terracotta and have 10 circular holes on the mold surface. And, in particular, the pastry base, which was bound to ignite a charcoal fire on the cake, was a delectable new feature in and of itself.

The cake mold makers will start by lighting the coal stove and waiting for it to heat up. Following that, pour the cake by first rubbing both sides of the cake with a stick wrapped in cotton coated in lard or oil, then waiting for the heated oil for each spoonful of starters, and lastly, flouring the bread to workers. With this method, we can easily remove the bread from the mold after it has been cooked, and the cake will not stay in the mold.

Chicken or quail eggs can be added to the batter upon request. Because seafood is constantly fresh in Nha Trang, it would be much better if you included squid or shrimp.

Four little cakes are served with two sauces: "Mam Nem" (fermented fish sauce) and "Mam Nuoc" (sweetened condensed milk) (fish sauce mixed with mouthwatering lemon juice, garlic, sugar, and red pepper). Choose one, then add shredded green mango, stir-fried spring onion, and chill to the sauce. On the side, minced pork balls are sometimes provided.
