Hu Tieu Nam Vang, a Vietnamese rice noodle dish with fresh seafood and pork, is a well-known street food dish in Ho Chi Minh City (Saigon) and southern Vietnam in general. This dish is delicious with pig organs, sliced pork, and various greens like chives and bean sprouts. This dish is a fantastic option for a Vietnamese meal. It's dead simple and easy, but it's nutritious enough to meet anyone's needs.
Hu Tieu Nam Vang translates to Phnom Penh Chinese noodle soup, a dish with Cambodian and Chinese influences that is extremely popular in southern Vietnam.
Unlike Pho, the broth for this noodle is pork-based, with minced pork, large poached shrimp, and various pork components such as liver, intestine, and a small poached egg, as well as fried minced garlic. The vegetable that goes with this noodle is also not the same as in Pho.
There are two types of this noodle available: dry Pho (kho-without soup) and water Pho (nuoc-with soup). They combine the noodles with soy sauce and offer you a separate little cup of soup for the dry version; you can eat the noodles first and then taste the soup later.
