Grilled dishes are highly popular in Sapa due to the cold temperature. Pork, chicken, duck eggs, corn, sweet potatoes, and other vegetables can all be grilled.
These skewers are prepared in a variety of ways by street vendors using their own spices. As a result, you won't feel greasy even if you eat a lot of grilled items at the same time. They are cooked directly on the coal burner after being prepared with sticks and some spices. These meal sticks will be provided immediately, along with a special dipping sauce. Depending on the type of cuisine you desire, each stick costs anywhere from VND 10,000 to VND 45,000. (Vegetables are the cheapest, and ribs are the most expensive).
Another popular grilled dish in Sapa is "Lon cap nach," which literally translates to "pig in your armpit." Most visitors may be perplexed by the name, but it has a meaning that alludes to a type of pig that the H'mong people feed on their own farms. Because the pig is small (about 4-5 kg), the villagers just catch one and take it to market under their armpits. After cleaning, the pig will be barbecued or roasted. The skin on this grilled or roasted pork is crispy and tasty. The meal is traditionally served with local wine by the hill tribes.
