Most variations of Nem Chua (fermented pork rolls) can be identified by their name, which is usually named after the region from whence it originated, such as nem chua Thanh Hoa, nem chua Dong Ba in Hue's historic royal capital..., nem Yen Mac in Ninh Binh Province. So, nem chua Yen Mac is one of the most well-known dishes that you should try if you visit Ninh Binh.
Pork thigh is traditionally used as the major element in Nem Chua. Nem chua is a dish composed of minced pork, sliced pigskin, and a spice and garlic blend. These ingredients are well combined before being wrapped in aromatic, fresh leaves (typically banana leaves) and rolled into small, boxy rolls, which are then left to ferment naturally for three to five days in a cool spot before being eaten.
Nem Chua Yen Mac has been there for a long time, but there are only a few people in Yen Mac who can make these particular rolls, since aside from knowing the techniques of the trade, it also takes passion and love for the job. The processing process must be followed to the letter: Nem manufactured to assure clean, delicious, bright colors, fibers must move them, and they must be used in a week at least without degrading.
Nem Chua Yen Mac has a distinct flavor when compared to Nem Chua from Vietnam's famed Cho Huyen Nem, nem Lai Vung, or Thanh Hoa nem. As a result, this recipe is distinct from the others. While other Nems are made from minced pork, Nem Yen Mac is prepared from sliced and crushed pig rump meat.
The clean white fiber wrapper, with chunks of garlic and chilli Martha left to enhance the taste, gives the Nem Chua Yen Mac the pink glow that is characteristic of rolls. When eaten at the same time or with garlic chili sauce, Nem hot sour tart is delectable.
According to legend, Mr. Pham Than Duat, prime minister of the Hue dynasty's court, lived in the village of Thuong Yen Mo (Yen Mac) at the Nguyen dynasty. Pham Thi Thu, his daughter, accompanied him into Hue. She studied the celebrity chef's palace to create fermented pork (nem chua) for his fermented wine, knowing his preference for fermented dishes and Hue fermented pork rolls. There are guests to play house with, and fermented pork rolls prepared by her daughters are treated with special discounts. Everyone must be delectable, even Nem Chua than the imperial celebration platter that has been provided. The tools on offer are frequently purchased and used as gifts.
