Pork thigh is traditionally used as the major element in Nem Chua. Nem chua is a dish composed of minced pork, sliced pigskin, and a spice and garlic blend. These ingredients are well combined before being wrapped in aromatic, fresh leaves (typically banana leaves) and rolled into small, boxy rolls, which are then left to ferment naturally for three to five days in a cool spot before being eaten.

Nem Chua Yen Mac has been there for a long time, but there are only a few people in Yen Mac who can make these particular rolls, since aside from knowing the techniques of the trade, it also takes passion and love for the job. Nem Chua Yen Mac has a distinct flavor when compared to Nem Chua from Vietnam's famed Cho Huyen Nem, nem Lai Vung, or Thanh Hoa nem. As a result, this recipe is distinct from the others. While other Nems are made from minced pork, Nem Yen Mac is prepared from sliced and crushed pig rump meat.

The clean white fiber wrapper, with chunks of garlic and chilli Martha left to enhance the taste, gives the Nem Chua Yen Mac the pink glow that is characteristic of rolls. When eaten at the same time or with garlic chili sauce, Nem hot sour tart is delectable.
