In southern Vietnam, Banh khot (Khot cake) is a popular delicacy. This crispy pancake is delicious with a unique fish sauce and fresh herbs. To enhance the flavor of the delectable delicacy, the rim should be slightly burned. Banh Khot, like Banh Xeo, is rolled in fresh vegetables before being dipped in fish sauce.
Mung beans, pork, coconut milk, and shallots are used to make Banh Khot, which is served in little circular moulds. Because it is the most closely related meal to Banh Xeo, many restaurants in Southern Vietnam include both on their menus and serve them together.
Banh Khot comes in two varieties in Southern Vietnam: the Mekong Delta version is thicker, softer, and frequently more yellow due to the addition of turmeric powder, whilst the Ba Ria–Vung Tau version is crunchier, flatter, and white, with shrimp and shrimp powder as toppings.
