Ca tai tuong chien xu (fried elephant ear fish) is a typical Vietnamese dish with origins in the Mekong Delta. The dish's strange name comes from the fact that its major component is a type of fish that looks like elephant ears and is only found in Vinh Long province.
To create the specialty, the elephant ear fish is fried deeply until crispy and fully cooked to provide a delicious flavor. It will then be placed upright on a dish and cut into serving pieces. The fish is sometimes covered with toasted ground peanuts before serving. The crispy exterior of the fried elephant ear fish contrasts with the delicate meat inside.
Elephant ear fish, meaty and tender chunks, are often blended with cucumbers, pickles, and herbs before being wrapped in rice paper. Traditionally, the rolls are dipped in a sweet and sour sauce made with fish sauce, spicy chili peppers, and minced garlic, sugar, lemongrass.
And where will you be able to enjoy it? Although several restaurants in Ho Chi Minh City serve fried elephant ear fish, this traditional delicacy is best enjoyed in the Mekong Delta region, especially in Vinh Long province.
