Bun Ca is one of the most popular dishes in the Mekong Delta because the locals enjoy noodle soups and Mother Nature provides them with a plentiful supply of fish. Bun ca Chau Doc, Bun ca Kien Giang, Bun ca Soc Trang, are just a few of the many variations of this tasty dish.
Bun Ca in the Mekong Delta is prepared from snake fish that live in rice fields, unlike Bun Ca in Central Vietnam. The clear and hearty broth, made from bones, snake fish bones, ginger, and tomatoes, gives the dish its flavor. Green onions are added as late in the cooking procedure as possible. The meal is commonly made with shrimp, fish sauce, oil, onions, salt, sugar, garlic, pickled leeks, hot chili peppers, eggs, paprika or annatto, rice noodles, mung bean sprouts, scallions, rau ram (Vietnamese coriander), cucumbers, and catfish or tilapia fillets, though there are some variations.
This filling noodle soup is traditionally served with lime wedges and mint sprigs on the side.
